Hemicellulase
Description
Deerland Hemicellulase is characterized by beta-mannanase and complementary cellulose and hemicellulase activities. Deerland Hemicellulase is an enzyme preparation derived from
Aspergillus niger. It is a white to tan color, free flowing powder.
Activity
Beta-galactomannanase - 50,000 u/g (Standardized with maltodextrin)
Beta-galactomannanase is a viscosimetric method, measuring the reduction of viscosity of a substrate made from locust bean gum at pH 4.5 and 40C. The analysis method is available upon request.
Properties
| Optimum pH | 4.0 |
| pH Stability | 3.0 to 6.0 |
| Optimum Temperature | 70C |
| Thermal Stability | Up to 60C |
Applications
Food Industry | Coffee bean | Removal of the sediment from coffee extracts in the manufacture of instant coffee. |
| Soy bean | Enzymatic peeling of soybean. |
| Bread | Anti-staling agent (especially under the presence of small amount of glucomannan or galactomannan like guar gum) |
Other Industries
| Textile | Desizing of fabrics made from synthetic fibers (in the case of galactomannan like guar gum or locust bean gum are used as size) |
